Embracing a Gluten-Free Lifestyle: Navigating Hashimoto’s Disease as a Family

Living with Hashimoto’s Disease often requires significant lifestyle adjustments, and for many families, these changes can be stressful. Personally, I struggle daily on “what to make for dinner! Now juggling in gluten free! Well so many failed attempts to find a diamond in the rough!                                                

In my journey, I’ve found that involving the whole family in adopting a gluten-free lifestyle has not only made the transition smoother but also strengthened our bonds. One delightful aspect has been our adventures in gluten-free baking, particularly the success story of our beloved Chocolate Chip recipe.

When faced with Hashimoto’s Disease, the decision to go gluten-free was not only a health necessity but also a family affair. Educating our children about the importance of dietary changes and involving them in the decision-making process has made the transition more meaningful. Surprisingly the support and willingness to try new food, has been awesome.

One of the highlights of our lifestyle change has been the joy of gluten-free baking as a family. We discovered that baking gluten-free can be just as delicious and rewarding. Our family has embraced the challenge of exploring alternative flours and experimenting with various recipes to find the perfect gluten-free chocolate chip cookie. NO CARDBOARD TASTE!

My son Ryder and I have decided to create a video showcasing our gluten-free baking adventure making our cookies. Sharing our video with y’all not only keeps you in the loop about our lifestyle change but also served as an educational tool. Many were surprised at how tasty gluten-free baking could be!

Involving my children in the kitchen has been a valuable teaching opportunity for all of us.  We’ve not only imparted the importance of gluten-free living but also educated them on the diversity of alternative ingredients. It’s empowering for them to know that gluten-free doesn’t mean sacrificing taste or variety.

Every new recipe becomes a “big test” in our culinary journey. Will it become “BEE APPROVED”? Keep it or ditch it?  Our Chocolate Chip recipe was a triumph. The unanimous agreement among family members that it was a hit boosted our confidence in our newfound gluten-free culinary skills. TRY IT OUT! Happy baking!

Easy Gluten Free Chocolate Chip Cookies Recipe

1 1/2 cups Gluten-free flour1/2 cup white sugar (I used coconut sugar)
1/2 tsp baking soda    1/2 cup of brown sugar
1/4 tsp baking powder 1/2 cup of salted butter
1/2 tsp fine sea salt 1 tsp vanilla
1 large egg   1 cup of chocolate chips

1. Preheat oven to 375 degrees F. Line baking sheets with parchment paper and set aside.

2. In a bowl, combine gluten free flour, baking soda, baking powder and sea salt. Mix and set aside.

3. In a bowl, cream together with a mixer, the butter and sugars until light and fluffy.

4. Add egg and vanilla and mix until combined.

5. Add dry ingredient mixture and mix until dough is uniform throughout.

6. Add chocolate chips and stir until evenly distributed.

7. Use a small spoon to measure out 1 1/2tablespoons portions of dough, then roll into balls and place on your baking sheets (9 cookies per sheet).

8. Bake in preheated oven for 9-10 minutes, or until cookies are barely set. DON’T OVER COOK!

9. Let cool on the baking sheet for 5-10 minutes. Then EAT your cookies!
